A few weeks ago we heard that Ronnie Killen would be opening his third restaurant in a year, Killen’s STQ. The restaurant will nestle into what was previously Randy Rucker’s Bramble, on S. Voss near Del Monte. We just got the official word from his camp, below, plus a quick description on what Briargrove and Tanglewood neighbors can expect.
- STQ in the concept’s name is fittingly a mashup of steak and barbecue – his execution of both have earned the Le Cordon Bleu-trained chef loyal followings at Killen’s Steakhouse and Killen’s Barbecue respectively. In line with the meat-focused offerings at his current establishments, Killen’s STQ will prominently feature a selection of proteins using wood-based preparations – from wood grilling to classic barbecue – with nearly everything receiving a gentle kiss of smoke.
And, a quote from the soft-spoken chef:
“This is the type of food I really like to cook,” says Killen of his latest undertaking. “I’m excited about visiting the local farmers markets. The menu will be more farm-to-table than our other concepts.”

In the West University area, Divino owner and chef Patrick McCray and sommelier Thomas Moësse are partnering to open Vinology, which is described as a wine retail concept where customers can buy either a full or half glass of over 300 wines, in order to taste before purchasing.

- Vinology will stock 300+ labels, a survey of the world’s wine traditions – both Old and New World, and all which have been hand-selected by the team. The inventory will be available for browsing online at the e-commerce website, via an iPad loaded with Vinology’s personal tasting notes, or with one of the knowledgeable and experienced sales team.
