Yesterday we heard that chef Greg Lowry was leaving Hotel Icon’s Voice restaurant at the end of the month for the soon-to-open Triniti, located on S. Shepherd between Westheimer and W. Alabama, in the old Pravada location. He will work there under chef Ryan Hildebrand. Initially we were told that Voice was going to be re-concepted into a Mexican restaurant, but have been unable to confirm that. A hotel spokesman says the revamped hotel restaurant will not be Mexican, but our source insists that it will be.

Anyway, between his departure from Voice and his new gig starts at Triniti — the building is still an open shell — Lowry plans on assisting the owners of Dirt Bar (1209 Caroline) in developing the menu for their new taco joint, El Gran Malo (2307 Ella Blvd.), which is expected to open this September.

Hildebrand (who has worked with Mark CoxPhilippe Schmit and Scott Tycer) is targeting October for opening Triniti with Lowry, Matt Lovelace (formerly of the Rockwood Room and The Barbed Rose) and chef de cuisine Jose Hernandez (known for his wizardry at Philippe), all working in the kitchen. Fred Zennati, who recently worked as GM at Strip House and as a captain at Tony’s, will be director of operations and sommelier at Triniti. While Triniti is still undergoing construction, the team plans to offer Triniti At Home, a catering program that showcases the restaurant menu.
