Siphon Coffee’s co-owner Michael Caplan has brought the Montrose location’s natural wood decor, streamlined look and halogen brews to the bustling button-down Greenway district. Located on Richmond in the Regions Financial Center, patrons can come into Cavo Coffee looking for a breakfast, lunch or coffee break. The interior’s neat, sleek vibe seems to align well with business customers’ desire for productivity and relaxation.

When we went for a weekday lunch to check out the menu, Cavo was still in its soft opening phase. Chef Adrian de la Cerda, formerly of Weights + Measures and food truck Ladybird, heads the kitchen.

Cavo Coffee's Toad in a Hole

We zeroed in on the toast options, which are served all day. Choices include goat milk ricotta and jam, Nutella berry, trendy avocado and pan de mie (a moist soft-crumbed bread) smeared with dollops of espresso cream. One in particular, called the “Toad in the Hole” ($7, photo above), features a 64-degree egg hidden by oven-torched parmesan flakes and plenty of truffle butter, all on a sturdy, toasted slice of challah bread. Expect a lot of parmesan’s biting flavor and be sure to use your cutlery (not your hands) on this one.

Cavo Coffee’s Media Noche sandwich

We also tried the Media Noche sandwich ($11, photo above), which includes a challah roll bulging with sous-vide pork belly, turkey and prosciutto smooshed between Swiss cheese and bright notes of mustard. Get ready for an indulgent layer of glistening pork belly fat to pair with a crunch of pickles and nibbles of kettle chips. This sandwich can even be shared, it’s that hefty. (Note that the sandwich menu is also available all day.)

Besides food, Cavo offers a killer beverage menu with slow bar brews (currently using beans from Heart Roasters in Portland, Oregon) and espresso (from Amaya Roasters here in Houston). Sip on a vanilla latte (all syrups and chai made in-house) or treat yourself to $5 wine or $3 beer during happy hour (2 pm to 7 pm, Monday through Friday). Overall, Cavo is a welcome spot for a caffeinated pick-me-up or a quiet place to loosen up after work.
